Cookies mix is usually used to make the pastry for Pineapple Tarts. It is also yummy just by itself! Just feed the mix into a cookie press and make up some “Samprit”. Also great for children’s activity! Just get them involved in sprinkling some decorations on top of the cookies. This cookie is crumbly and soft, and melts in your mouth like butter. So make sure you eat it in one bite or you’ll get crumbs all over the floor (Don’t say I didn’t warn you!). However, this cookie is so soft that it can’t be rolled out and cut with a cookie cutter. So a cookie press is essential!

If you do not own a cookie press, you can make it into balls (like in the video). Be quick! The warmth of your palms will melt it and make it sticky. But I promise you, it will be WORTH IT!

Note: I recommend using 2 cookies mix for 1kg of pineapple paste. If you decide otherwise, please keep remaining pineapple paste in the fridge once opened.

Instructions

What you need:

200g butter

2 egg yolks

1tsp vanilla essence

Instructions:

  1. Cream softened butter, egg yolk and vanilla essence.
  2. Add in premix flour portion by portion and mix well.
  3. Shape cookies using a cookie press.
  4. Bake in preheated oven at 170°C for 15-20 minutes.
