Kuih lapis is a traditional cake built up of nine layers of rice pudding. The word “lapis” in Malay means layer, hence kuih lapis means layer cake. The most common colour schemes are red, green and white. It has a wobbly and soft texture with a distinctive coconut milk flavour. Kuih lapis is steamed gradually, and layers are subsequently added in alternating order. It requires work and patience in making this, however, the end product is worth all the work!

Instructions

What you need:

  • 500ml  Water
  • 200ml  Coconut milk
  • 1-2 drops  Red colouring
  • 1-2 drops  Green colouring
  • 1-2 tbsp Pandan juice (optional)

Steps

  1. Mix premix flour with water and leave aside for 10-15 minutes.
  2. Add in coconut milk, strain and divide into 3 parts.
  3. Add colour in each part of batter.
  4. Preheat 9″ tray in steamer, steam each layer at medium heat for 5 minutes or until cooked.
  5. Steam the last layer for 10-12 minutes.
