Kuih Bengkang Beras is another Nyonya Kuih loved by many. It is also commonly known as “Pork Belly Kuih” due to it’s charred surface and silky white body. Unlike other kuihs that are normally steamed, this kuih is baked in an oven. Thus, it is called kuih “bengkang” which literally means baked kuih. It is rich in coconut flavour and silky smooth in texture.

Banana leaf is recommended for added fragrance. But if it is not available, baking paper can be a substitution as well.

What you need:

620ml water

(B)

600ml water

600ml coconut milk

3 pandan leaves

Instructions:

  1. Soak 620ml water with premix flour for 4 hours.
  2. Add in (B) and sieve mixture.
  3. Cook mixture and pandan leaves on stovetop until thick and bubbled up.
  4. Pour mixture onto 9″ tray, lined with banana leaf, and bake at 190°C for 90 minutes.
  5. Leave it to cool completely before serving.
