Huat Kuih Premix

Huat kuih is a popular traditional steamed rice cake. It is also often known as sweet rice cake or bai tang gao (白糖糕) in the Chinese language. There are multiple variations which include cupcakes in different colours. It is both sweet and light in texture. The common basic ingredients used are rice flour, sugar and coconut wine. Since coconut wine is not available in NZ, yeast is being used instead, without compromising it’s flavour.

Instructions

What you need:

  • 600ml  Coconut water/warm water
  • 1-2       Pandan leaves
  • 1 tsp    Instant dried yeast

Steps

  1. Boil coconut water with pandan leaves. Let cool until luke warm.
  2. Mix premix flour and yeast together.
  3. Add coconut water with premix flour, mix well.
  4. Filter mixture and leave aside for 3 hours.
  5. Preheat 9″ tray in a steamer.
  6. Mix again before steaming. Steam over medium fire for 40 minutes.
