Caramel Cake (Ma Lai Ko) Premix

Caramel cake or “Ma Lai Ko” (马来糕) is a fluffy, steamed sponge cake. The word “ma lai” refers to “Malay,” and the word “Ko” means cake. As the story goes, Ma Lai Ko originated in Malaysia via British influence, before making its way to East Asia where it has become a popular dim sum dish.

*To create honeycomb texture, leave batter aside for 1 hour before steaming.

Instructions

What you need:

  • 200ml Golden syrup
  • 3          Eggs
  • 300g    Coconut milk

 Instructions:

  1. Beat eggs, sugar and sugar syrup until slightly thickened, then beat in coconut milk.
  2. Seive and fold in flour.
  3. Pour into 9″ tray or small muffin cups.
  4. Steam 9″ tray for 45 minutes or small muffin cups for 25 minutes.
